Beef Tagine With pearl Couscous

INGREDIENTS
- 1.5kg diced slow cook beef
- 200g diced onions
- 10g paprika
- 8g ground cumin
- 8g ground coriander
- 6g cinnamon
- 10g crushed garlic
- 1L beef stock
- 800ml Leggo’s Tomato Puree
- 60g pitted dates
- 500g frozen Edgell Baby Carrots
- 500g frozen Edgell Whole Baby Beans
- Coriander leaves and pearl couscous, for serving
METHOD
- Brown beef and set aside.
- Add onion, spices and sweat. Add garlic and continue sweating.
- Stir in stock, Leggo’s Tomato Puree, dates and beef. Cover and simmer until beef is tender.
- Add Edgell Baby Carrots and Edgell Baby Beans and simmer until vegetables are tender. Garnish with coriander and serve with pearl couscous.
